Summer Salad


Everyone has their superhero, their rock, the very person who sails them through all their highs and lows. They may not agree with you, you may not like everything they do but in the end they are the one on whom you can count in your toughest moments. And we may not notice but this strength is what makes our life run smoothly…


My better half is my superhero, my rock and I may not be the kind of person who will say this to him or to anyone but I know this. Trust me we are not the lovey-dovey couple who are perfect to endorse the “Made for Each-other” anything, we are rather the kinds who disagree on everything from the color of the sofa to every possible thing where we need to make a decision together. And even though we hardly ever see anything with same eye, we know we’ll do just fine in the end. And I know with him beside me, everything will be just well taken care of.

But with him travelling for business a lot lately, my life has turn into a little whirlpool. I spend my day juggling between, work, kids, home and zillion phone calls telling him that he needs to be HERE! So now you know why I have been little slow with my posts and the only person to be blamed for this is HIM. Yes I totally know I need to stop blaming other for my ridiculous time management.


While I simplify and smooth my days in the absence of my super-hero, here is a super easy and delicious recipe for you all to enjoy and simplify your meal a bit. This refreshing and easy summer salad is just perfect for the spring/summer days when all you want to enjoy is something little and refreshing. I like using rice noodles in my summer salad; they are delicate and take on the flavor of the dressing beautifully. If you like add some roasted chicken, cooked shrimps or some more veggies.

Summer Salad

Yield: Serves 2-3


  • 1 6ounce package of thin rice noodles (cooked according to the direction on package, rinsed and drained)
  • 1 cup carrot, julienne
  • 1 cup cucumber, thinly sliced
  • 3-4 scallion, chopped
  • ½ cup cilantro, chopped
  • ¾ cup peanuts, chopped coarsely
  • 1-2 teaspoon lemon juice
  • Salt and pepper as per taste.
  • Dressing-
  • 2 garlic cloves, minced
  • 3 tablespoons red wine vinegar
  • 1 ½ tablespoon chili sauce (can be adjust as per liking)
  • 2 teaspoons sugar


  1. In a large bowl mix all the ingredients for the dressing. Add the cooked noodles along with carrots, cucumbers, scallions, cilantro, lemon juice and salt and pepper. Mix well and let the salad sit for 10-15 minutes for the flavors to develop.
  2. Once ready to serve add the chopped peanuts, toss well and serve cold.
