Soba Noodles Salad


The summer this year has been nothing less than brutal. Trust me I love summers, the bright sunny sky, the long days, the beaches, the sands but last few days have been crazy hot. Even though I am an outdoor person, I have been hiding from Mr. Sun who seems to have been very angry lately….

The last thing I want to do on such hot days is to spend hours in my kitchen. I have been making meals that require minimal cooking and are light, easy and healthy. Salads have become my new best friend, they are faithfully appearing on my table for almost every meal.


Today I am sharing a recipe for quick and delicious “Soba Noodles Salad”. I love soba noodles, for me they are a lifesaver when I am on time crunch or just out of energy to make a decent meal. They are definitely a must item in my pantry. This soba noodles salad is such a wonderful and delicious way of enjoying light summer meal.

I agree this recipe is shamelessly simple but don’t we all want few such recipes in our life. Recipe that are full of flavors, recipes that are good for you, recipes which comes together with a blink of eye; yes this a recipe that has all the qualities that makes it a must have for any repertoire.


This salad is very versatile; make it the way you want. Add any ingredient of your choice, from cooked chicken to shrimps or tomatoes or beans; play with the dressing, make it sweeter or spicier… This is recipe is your best friend, a friend who will always make you happy….



Soba Noodles Salad


  • Soba Noodles - 6-7 ounce.
  • Cucumber - 1 seedless ( julienne - finely cut into sticks ).
  • Scallions - 2 finely sliced.
  • Cilantro fresh - 1/4 cup, finely chopped.
  • Salt and pepper for seasoning.
  • 1-2 tsp of sesame oil to tossed the noodles after they are boiled, washed and drained.
  • Eggs - 2 boiled, optional.
  • For Dressing-
  • Lime juice- 1 Tbsp.
  • Fresh grated ginger - 1 tsp.
  • Sesame oil - 2 tsp.
  • Honey - 1 1/2 Tbsp.
  • Soy sauce - 1 1/2 Tbsp.
  • Rice vinegar - 2 tsp.
  • Pepper flakes - 1/4 tsp, optional.


    Prepare Dressing-
  1. Combine all the ingredients in a clean non-reactive bowl, give a good stir and keep aside. You acn also do this in a jar, cover the lid and give it a good shake.
  2. Prepare Salad-
  3. Boil soba noodles as per the direction on the package. Make sure not to over boil them, they should be al-dente. Rinse the boiled noodles under cold water and drain them well. Toss the noodles with sesame oil gently, to help them from sticking to each other. Keep aside.
  4. Boil the egg to desired consistency, if using.
  5. In a large bowl add the noodle, the chopped vegetables and the dressing. Give everything a gentle toss to mix everything.
  6. Check for the seasoning, add salt if need. Add black pepper. Give a gentle last toss.
  7. Serve with the boiled egg.
