Eggs are dyed and filled with candies and are ready to be hidden. Sweet little treats are getting ready and kids are super excited for the egg hunt and Mr. Bunny! Seriously I don’t know who is more excited me or kids. Running around chasing my kids and fulfilling all the duties of motherhood is exhausting but you know moments like these, when I see my babies smiling and all excited for Easter or Halloween or Christmas makes every crazy day worth living and given a choice I will do it again and again.

“Raspberry Watermelon Salad with Mint” is perfect indulgence for lovely spring or hot summer days, it is refreshing and super healthy. The mint here in this salad adds lovely fragrance and flavor but if you are not a fan leave it out. This salad is best made and served the same day. You can make this up to 4 hours in advance and keep it refrigerated.

Raspberry Watermelon Salad with Mint

Yield: Serves 6

Ingredients

  • 5 cups watermelon, peeled, seeded (if necessary) and cut into small cubes
  • 1 pint raspberries, fresh
  • 12-14 mint leaves, fresh
  • 1 tablespoon sugar
  • 2 teaspoon lemon juice.

Instructions

  1. Add everything in a large glass bowl and toss well so that everything is well combine.
  2. Let the salad stand for 15-20 minutes, for the flavors to develop, tossing occasionally.
  3. Serve it cool or at room temperature.
