Mediterranean Kebab


Is it too much to ask for a peaceful start of the day?

Is It?

When I wake up when the alarm rings and not 20 minutes after, jumping and cursing myself for doing it again.

When my kids wake up smiling not whining… Boys!

When my husband does not have an early morning call; Honey I can really use some help!

When I don’t get a red light on every single traffic signal… Really, I mean …

When the lady driving in front of me can stop doing her make-up in the car and Drive!

Is it too much to ask? Or may be I should start getting up with my alarm. I know I should!


While it may take some time for me to get use to of getting up as soon as my alarm rings and make my morning smooth. I do have a recipe to share that can make any meal time a smooth and happy meal time.



“Mediterranean Style Kebabs”, do I need to say more? A perfect blend of flavors; these kebabs are a breeze to make. Some chopping, little mixing, quick grilling/frying and voila these babies are ready in no time. Serve them a with some lavash/pita bread or as an appetizer or side, they are delicious anyway you want to enjoy them.


Mediterranean Kebab


  • 1 tablespoon oil, plus more for grill
  • 1/2 medium size red onion, grated
  • 1lb ground chicken (I use thigh meat but you can use breast meat too)
  • 2 garlic clove, minced
  • 1/4 cup fresh mint leaves, finely chopped
  • ¼ cup cilantro, finely chopped
  • ½ cup feta, crumbled (you can use plain/Mediterranean herb's flavor)
  • Coarse salt and ground pepper
  • ¼ teaspoon red pepper flakes, optional
  • 8-10 wooden skewers soaked in water for minimum 30 minutes


  1. Lightly oil and heat a grill or grill pan to medium-high. Ina a large combine oil, grated onion, chicken, garlic, chopped mint, chopped cilantro, feta, and 1/2 teaspoon each salt and pepper (or as per taste) and red pepper flakes (if using). Mix well kneading them as you would knead the dough. Divide mixture into 8-10 portions and make balls of each. Put each ball on skewer and form around skewers, and brush with 1 tablespoon oil. Grill until cooked through, about 10 minutes, flipping 2-3 times to avoid burning.
  2. Serve hot and enjoy!
