Fried Rice


The virtues of having a pot of cooked rice on hand at all the time are endless; trust me a serving or two of cooked rice in refrigerator comes real handy. This is one of the few precious tips I got from the kitchen of many great cooks. Cook some extra and store it in refrigerator; then just simply use it for next meal or within a day or two. It is always a great back up and taste delicious whether you make it into a sweet pudding or make the most amazing fried rice!! I mean who does not like rice? I strongly believe that rice and chocolate are 2 humble ingredients no-one can really dislike; yes I agree some may not eat them but hate them… Not Happening!!


Fried Rice is a gem of Asian Cuisine, loved and cherished by the world. There is no hard and fast rule for making this dish, endless numbers of recipes and technique can be found for this. Today I want to share with you all my version of Fried rice, the way we enjoy it in our home. I keep it very simple, some aromatics and scallions are pretty much what I add to it. Serve it as a side dish or enjoy it by itself with an egg, this recipe is always a pleaser. If you want add any vegetable or meat of your choice, make it the way you like..






Fried Rice


  • Rice cooked – 3 cups, preferably day old.
  • Scallions – ¾ chopped.
  • Ginger – 2 tsp. minced.
  • Garlic – 2 tsp. minced.
  • Red chili Pepper powder – ½ tsp.
  • Sesame seeds – 1 Tbsp., dry roasted.
  • Salt and pepper as per taste.
  • Vegetable oil – 2-3 Tbsp.
  • Eggs - 2
  • Sauce-
  • Sesame oil – 1 Tbsp.
  • Soy sauce – 1 ½ Tbsp.
  • Vinegar – 1 tsp.
  • Lime juice – 2 tsp.


  1. Mix all the ingredients for the sauce well in a bowl and keep it aside.
  2. Heat the vegetable oil in a wok or a skillet, add the minced ginger and garlic and cook for about 30 seconds to let the flavor to bloom (keep stirring the ginger –garlic to avoid burning).
  3. Now add the scallions, stir-fry for another 30 seconds. Add the rice and cook, stirring often, for about 2 -3 minutes. Now add the sauce and cook for another 2-3 minutes; keep stirring it to make sure the sauce coats the rice well.
  4. Finally season with salt and pepper and sprinkle the red pepper powder (optional).
  5. In a non-stick skillet fry the eggs until cooked to your preference. Sprinkle the eggs with salt and red pepper powder or pepper.
  6. Serve the rice topped with the fried eggs and enjoy!
