Flatbread Pizza with Chicken and Peaches


This recipe is exactly what it is called; an instant pizza. True, I do spend few minutes in prep but that is not much to ask when the reward is extremely delicious and satisfying.  This, “Flatbread Pizza with Chicken and Peaches” is a wonderful meal anytime. Yes there are times when I, a complete foodie find it difficult to spend more than few minutes in kitchen or decide what to eat. Even though this doesn’t happen too often but when it does, this is a kind of recipe I give in too. Fast, simple, healthy and incredibly delicious, this pizza has got it all!!

Before I move to the recipe, let me tell you a bit about the origin of this flat bread pizza. Traditionally known as Lamejun, which literary means meat with dough, it is a popular delicacy in Turkey and Armenia. The dough is rolled out very thin and topped with a mixture of minced meat, spices and vegetables like onions and pepper mixed to a paste consistency. Finally it is cooked over a wood fire and the juices from the meat mixture are absorbed by the dough while cooking; making it extremely flavorful and aromatic. Also Sumac a wonderful tangy spice from the eastern Mediterranean region adds wonderful hint of flavor here.

Although I love the original Lamejun but recently I found this version of the pizza using Lavash (Flatbread), as the base instead of fresh dough. This makes this pizza a very easy and fast fix. The recipe is inspired by the recipe for Lamejun from the delightful cookbook “Spice – Flavors of the Eastern Mediterranean” by Ana Sortun.

Flatbread Pizza with Chicken and Peaches


  • Chicken breast/thigh mince – 1 lb.
  • Onion – 1 small.
  • Scallion – 2 root ends removed.
  • Bell pepper – 1
  • Garlic – 1 clove.
  • Jalapeno – 1
  • Cilantro – ¼ cup.
  • Sumac – 1 tsp. (optional)
  • Olive oil – 2 Tbsp.
  • Lavash - 4 rectangular one's about 18 inches long (or round).
  • Salt and pepper as per taste.


  1. Preheat the oven to 375 F.
  2. Drizzle olive oil onto a heavy baking sheet and place the peaches on the sheet with cut side down. Season with salt and pepper and roast the peaches for 12 minutes or until they are soft and tender when poked with knife. Once the peaches are cool remove the skin, the skin should pull of easily.
  3. While the peaches are in the oven get started with the chicken mixture.
  4. Chicken Mixture-
  5. In a food processor add chicken mince along with all the vegetables, 1 Tbsp. of olive oil and salt and pepper. Pulse it on high till everything is well minced and mixed. The mixture must get smooth and paste like or it will crack and break up as it cooks.
  6. Take out the mixture in clean bowl and keep aside till ready to use. This can be done a day in advance too.
  7. Assembling the Pizza’s-
  8. Cut each Lavash into 3 pieces, so you will have approximately 5x6 inch rectangular (depending on the shape and size of the Lavash).
  9. Place about 1/3 cup of the chicken mixture onto each Lavash and spread as thinly as possible close to the edges. Spread the mixture in an even layer.
  10. Place pizza on a baking sheet or pizza stone and sprinkle each with little sumac.
  11. Cooking the Pizza-
  12. Bake them in pre-heated 375 F oven for 12-14 minutes or until they are crisp and chicken mixture is cooked through.
  13. You can also grill them.
  14. Serving-
  15. Finally top each pizza with 2-3 slices of peach, sprinkle some chopped cilantro and sumac and serve them hot.
