Come on everyone lets make some good, delicious and pretty breakfast bagels. These babies don’t take much time to make, taste absolutely delicious and you can add anything in your omelet so really you don’t have to stick with recipe here too.  And yeah don’t worry if it is evening an you are actually trying to figure out what to make for dinner, make these add some meat or more veggies, stack these baby as tall as you want. You will be happy!!

A simple blueberry bagel with delicious omelet, some hot coffee, doesnt the world already looks like a happy place!!

Now I like blueberry bagels but you can choose any bagel of your choice and any size; I love the mini one (I buy the archer farms ones from target). As for omelet, this is the way my mom makes, very simple, eggs, onions, jalapenos, tomatoes, cilantro and salt and some chili powder, all beaten together and fried. You can add some chopped deli meat or more veggies. Sometimes I also add  shrimps (precooked and chopped), so pretty much throw in what ever you want, you cannot go wrong here.

These come together so fast, so you can make them even on a busy morning and wrap it in the foil and your breakfast/lunch is all ready to come along.

Breakfast Bagels

Yield: Serve 4-5 people

Ingredients

  • 10 mini blueberry bagels
  • 5 eggs
  • ¼ cup shallots, finely chopped
  • 1 jalapeno, finely chopped (optional)
  • ¼ cup tomato, finely chopped
  • 2 tablespoons cilantro, minced
  • ¼ teaspoon red chili powder (optional)
  • Salt as per taste
  • Oil for frying the omelets (you can use butter if you want)

Instructions

  1. Very lightly toast the bagel if you want. Keep aside
  2. For omelet
  3. In a large mixing bowl, add eggs, onion, jalapeno, tomatoes, chili powder and salt. Beat well till the eggs are well beaten.
  4. Heat oil in a pan and in batches start frying the omelet. I make one omelet per egg, you can make a big omelet if you like. No hard and fast rule.
  5. Fry the omelets over medium heat for about 2-3 minutes on each side or till they are cooked. Once the omelets are done, quickly divide them in equal port and put it on the top of each bagel half, top it with the other half. Serve hot along with ketchup or hot sauce and some coffee or tea. Enjoy!

Notes

Use eggwhites instead of eggs if you want. You can adjust the amount of heat as per your liking.
